Wagyu House’s opening window in Bellevue, Washington, now reaches into the first quarter of 2027. Parent company Chubby Group confirmed to MyNorthwest that the all-you-can-eat Japanese barbecue restaurant expects to open by the end of 2026 or during the first three months of the new year.
That broadens the timetable in Buffet Authority’s October 7 coverage. A September preview from The Bellevue Collection had expected late November, while an October 1 local report gave an end-of-2026 target. November remains possible under the latest window, but it is no longer the furthest date diners have been given.
The address remains Level 2 of Lincoln Square North, 700 Bellevue Way NE, Suite 280, near Lucky Strike. Wagyu House is taking the former Din Tai Fung space, bringing tabletop grills to a dining room that spent years building its reputation on dumplings.
A long wait for the upstairs grills
The project has a history considerably longer than this autumn’s opening previews. In April 2024 reporting, Chubby Group’s plan called for an AYCE Wagyu hot-pot and Japanese barbecue restaurant inspired by Wagyu House Chicago, with a December 2024 opening target.
That proposal described a 6,685-square-foot remodel designed by Studio19 Architects. The calendar has since moved well beyond the original target; the company has not publicly explained the delay.
Din Tai Fung’s departure was a relocation within Bellevue. Its original upstairs restaurant opened in November 2010, becoming the Taiwanese dumpling chain’s second U.S. location. It moved to a larger, 17,000-square-foot restaurant at 10455 NE 8th Street in April 2024.
The latest Wagyu House coverage emphasizes yakiniku. The brand’s own description spans AYCE Japanese grilling and shabu-shabu, with American and Australian Wagyu and Japanese A5 among its beef selections.
Wagyu House currently lists restaurants in Atlanta, Chicago and Houston, with its Seattle-market and New Jersey locations marked coming soon. The Bellevue restaurant is the project marketed under the Seattle name. MyNorthwest reports that it will join Chubby Group’s Mama Xita BBQ in Bellevue and Wagyu Factory in North Seattle.
The operator’s Seattle-market page still says coming soon. Bellevue’s opening day, prices and dining tiers remain unannounced, including which beef cuts will be offered at each tier.
