Wagyu House is planning an all-you-can-eat Japanese barbecue restaurant in the former Din Tai Fung space at Lincoln Square North in Bellevue, Washington. Table grills will put the cooking in diners’ hands. The Bellevue Collection expects a late-November opening, well after an earlier plan aimed for December 2024.
The landlord’s September 29 preview describes a beef selection spanning American and Australian Wagyu through Japanese A5. That gives the restaurant quite a range to work with. Bellevue pricing and dining tiers have not been announced yet, so the cuts included at each level remain unsettled.
The restaurant is slated for Level 2 near Lucky Strike at 700 Bellevue Way NE, Suite 280. Downtown Bellevue Network’s October 1 report gives a broader end-of-2026 target, and the operator’s Seattle-market page still says coming soon. There is no fixed opening day yet.
Yakiniku brings a different offering to the former dumpling restaurant: the meat cooks at the table, with the tongs close enough to become part of the conversation. An all-you-can-eat meal with a grill in the middle does tend to give the person managing dinner a rather literal job description.
A longer road to the table
The project first appeared in local reporting in April 2024, when Downtown Bellevue Network described Chubby Group’s submitted plans for an AYCE Wagyu hot-pot and Japanese barbecue restaurant. A 6,685-square-foot remodel was planned, with Wagyu House Chicago as the inspiration and a more luxurious interior intended for Bellevue.
That account anticipated a December 2024 opening. The newer previews move the timetable into late 2026 and emphasize Japanese barbecue under the Wagyu House name. Hot pot was part of the earlier proposal; its place in the eventual Bellevue menu remains unconfirmed.
The room became available after Din Tai Fung moved to a larger space at 10455 NE 8th Street in 2024. Its departure was a local relocation, opening a chapter for another restaurant in the upstairs Lincoln Square North dining room.
Chubby Group also operates Chubby Cattle, The X Pot, and Niku X, putting Wagyu House within the group’s wider restaurant roster. Bellevue will have its own menu and prices to announce. For now, the landlord’s November expectation is the more specific target, with the later local report leaving room through year’s end. After the earlier wait, the next welcome detail would be an actual opening day.
