Umi Japanese Shabu Shabu in Meridian returned in July with considerably more sushi to go with its hot pot. The all-you-can-eat restaurant’s renovation gave rolls a bigger place on the menu while keeping the simmering pots that brought it to town in 2024.
The restaurant at 2325 E. Fairview Avenue, Suite 160, closed May 20 for renovations and rebranding. A planned June 1 return was delayed, and a later door notice named July 13 as the new target. By July 16, the Idaho Statesman reported that Umi had recently reopened.
More rolls alongside the hot pot
Sushi was already part of the earlier meal, though local reporting described it as playing second fiddle to the broth, meat and seafood cooked at the table. The expanded menu, displayed during the closure under the name Umi AYCE Sushi and Hotpot, gave sushi fans a longer list to work through.
In June, the Statesman reported a $27.99 regular AYCE lunch with hot pot and dozens of rolls. The premium dinner selection added 21 more, including Rainbow Deluxe, Idaho, Pink Lady and I Love Hamachi rolls.
The posted menu also allowed individual sushi orders, with some premium rolls priced as high as $15. Those same richer choices joined the larger AYCE dinner selection, giving diners more to consider between trips back to the broth.
Umi described the expansion as a response to demand. It did not explain the reopening delay, but the July return brought the two specialties together in a restaurant with more room on its menu for sushi.
Umi’s Meridian page lists hours of 11 a.m. to 10 p.m. Sunday through Thursday and until 10:30 p.m. Friday and Saturday.
