The Cove in Las Vegas Replaces All-You-Can-Eat Sushi With an À La Carte Menu

The former premium AYCE sushi and oyster restaurant announces an omakase-inspired, à la carte direction.

The Cove in Las Vegas has moved away from its all-you-can-eat sushi and oyster format, announcing an upscale à la carte direction.

The restaurant announced an upscale à la carte direction in a March 6 post. Its current menu carries a New A La Carte heading and individually priced dishes.

The Cove is at 280 E. Flamingo Road, Suite C, away from the Flamingo hotel and casino. In autumn 2025, it promoted itself as The Cove Premium AYCE Sushi & Oyster, with those higher-end seafood items among its advertised attractions.

What remains on the menu

The new menu still has plenty for sushi lovers: nigiri, sashimi, classic rolls and rice-free rolls, plus carpaccio such as truffle garlic tuna and yuzu jalapeño yellowtail. Oyster shooters keep oysters in the lineup.

Pork gyoza, shrimp tempura, chicken karaage and skewers round out the cooked dishes. The operator describes the new direction as omakase-inspired, while the published menu lets diners order individual plates.

Returning customers should plan for an à la carte meal at the former premium AYCE restaurant.
