A former teppanyaki restaurant on Merritt Island, Florida, has acquired an unlimited-dining second act. Sushimo, at 125 East Merritt Island Causeway, is serving sushi and hibachi AYCE in the space previously occupied by Hokkaido Japanese Steakhouse.
The restaurant was already open by this summer. An October 11 Space Coast Daily feature brings a fresh look at the operation, describing a redesigned dining room and an approximately $27 AYCE offering built around ordering dishes for delivery to the table.
The restaurant’s own Facebook description identifies it as a sushi and hibachi AYCE destination with one-price access to its menu. The cooked-food contingent has a reason to join the sushi contingent.
Space Coast Daily writer Giles Malone describes salmon and chicken hibachi and crab rangoon in his visit. Sushimo also lists gyoza, shumai, tempura, tuna tataki, nigiri, sashimi, teriyaki and an assortment of rolls on its ordering menu.
Earlier Florida Today coverage described seating for more than 100 guests and placed Sushimo among the area’s summer restaurant openings. The October feature supplies the newer look at its AYCE offering and redesigned dining room.
The address is in First Merritt Center, near Publix and TJ Maxx on State Road 520. An older landlord leasing plan identifies Hokkaido in suites 113–115, matching the address of the new Sushimo business filing. The plan put Hokkaido’s space at 3,463 square feet, a useful glimpse of the footprint behind the new dining room.
Florida corporate records show SUSHIMO LLC was filed on February 23, 2026, with Xiangqin Lin listed as manager. Its registered restaurant address spans suites 113–115, the same units identified for Hokkaido in the older leasing plan.
The change gives the familiar restaurant address a different rhythm: a succession of ordered dishes, with sushi and cooked options sharing the visit. A hibachi fan and a roll collector may finally have enough common ground to stop negotiating over where to eat.
