Bolingbrook’s former Red Lobster is being proposed for another seafood-oriented restaurant, with considerably more movement at the table. Koi Sushi has applied for a building permit at 209 South Weber Road, where it plans all-you-can-eat sushi served on a rotating conveyor belt.
The Village of Bolingbrook announced the application, and Patch reported the project October 13. The planned restaurant would offer specialty rolls, nigiri, sashimi and tempura, according to the village information cited in that coverage.
Koi’s announced format combines conveyor service with unlimited dining, with rolls and nigiri among the planned sushi choices. The wider selection would also include sashimi and tempura, giving diners several ways to build the meal beyond the dishes travelling along the belt.
The plans also include takeout, delivery and catering. Those additional services broaden the proposed operation beyond the conveyor dining room, although the announcement does not describe their menus or when they would launch.
The application establishes the proposed restaurant use, but the public announcement supplies no construction schedule or opening date. Prices and a detailed menu have also not been released. The project remains a coming-soon development.
The address became available after the Bolingbrook Red Lobster closed in 2025. A December 10 Patch report said the village confirmed the closure at its December 9 meeting and adjusted its liquor-license count to reflect the restaurant’s departure.
That places the local closure after Red Lobster’s 2024 bankruptcy and earlier rounds of restaurant closures. The reporting does not provide an exact final service date for this Weber Road branch.
Koi would give the building a different seafood routine, with sushi on a belt and Japanese kitchen dishes replacing the previous chain menu. The village has identified the restaurant’s name and concept; its public announcement does not identify the individual operators.
For Bolingbrook’s AYCE diners, the permit news supplies both a specific address and a distinctive format to follow. The next announcement to watch is an opening schedule for the former Red Lobster site.
