KanSha Sushi is targeting an October 10 grand opening in Evansville, according to local food reporter Brian Buxton of Fingers, Fork, Knife & Spoon. The planned all-you-can-eat Japanese restaurant is at 711 N. Green River Road in Towne Centre.
Buxton’s opening report and previews describe sushi, sashimi, tempura and hibachi or teppanyaki dishes in a made-to-order format. That would give diners a fixed-price meal spanning sushi and cooked Japanese food, rather than a conventional self-service buffet line.
Buxton reports adult prices of $20.99 for weekday lunch and $30.99 for dinner. For children ages 7–11, the reported lunch and dinner prices are $10.99 and $13.99; for ages 3–6, they are $5.99 and $7.99. Those figures describe the planned opening offer.
The restaurant’s own social page identifies the North Green River Road address. It is the former Coconuts music-and-movie retail space, a conversion Buxton documented in his sneak-preview coverage. A building once arranged around recordings is being fitted out for dining tables and a Japanese kitchen.
Earlier paperwork used a different restaurant name. An April 2026 Indiana Alcohol and Tobacco Commission document lists Sushi King Evansville LLC, doing business as Kanpai Sushi, at the same 711 N. Green River Road address. Current operator and local reporting use KanSha Sushi.
The reason for the name change has not been publicly established.
Buxton has linked the development to Kanpai Sushi FW in Fort Wayne, adding a restaurant-group connection to the local retail-space conversion. The existing Evansville Kanpai restaurant on Washington Avenue is a separate address and should not be confused with the Green River Road project.
October 10 remains an attributed opening target until the restaurant confirms service. The next useful details for prospective diners are the final menu, lunch and dinner periods, and confirmation that the first orders are being taken.
