Izumi Sushi & Hibachi is now targeting roughly Thanksgiving for its Wichita, Kansas, opening after a series of delays pushed the project well beyond its original early-2026 schedule.
The North Dakota-based all-you-can-eat Japanese chain first confirmed the Greenwich Place restaurant in November 2025. The target later moved into summer, then early fall, and now late November. No firm grand-opening date has been announced, so Thanksgiving remains an estimate rather than a reservation-ready date.
Izumi’s Wichita Opening Has Slipped From Early 2026 to Late November
The Wichita restaurant is taking over the former Buffalo Wings & Rings at 2636 N. Greenwich Court, a space that has been vacant since 2023. Izumi currently lists 10 operating restaurants across North Dakota, Iowa, Nebraska, Mississippi and Florida, including 2026 openings in Omaha, Gulfport and Pensacola.
Izumi is AYCE, but it is not a traditional walk-up buffet. Guests order from paper sheets and can continue requesting sushi, hibachi dishes, teriyaki meats and appetizers for a fixed lunch or dinner price. The kitchen produces the food in rounds, keeping the unlimited structure while avoiding a large self-service line.
The AYCE Format Uses Order Sheets Instead of a Walk-Up Buffet
Kansas is also getting a second Izumi. A Topeka restaurant is under development in the former Old Chicago at 1231 SW Wanamaker Road, and that project is likewise aiming for roughly Thanksgiving.
If both schedules hold, the chain could enter Kansas in two markets almost simultaneously. After nearly a year of waiting in Wichita, however, the turkey may arrive before the sushi. The opening remains one to watch until Izumi turns the holiday estimate into a date.
