Glass Box, the San Diego sushi bar and Asian kitchen known for its glass-walled presentation, is opening its first expansion Saturday, Sept. 26, at The Bend in southwest Las Vegas. The roughly 75-seat restaurant at 8670 W. Sunset Road adds a large bar, open kitchen and approximately 500-square-foot terrace.
The Las Vegas opening is more than a geographic expansion. It introduces an all-you-can-enjoy lunch and dinner format alongside a separate omakase experience, giving the restaurant two very different ways to sell a premium sushi meal.

Reported AYCE selections reach well beyond the entry-level roll lists associated with older sushi buffets. Items highlighted ahead of opening include hamachi crudo, yellowtail kama, a bluefin toro-uni roll, baked lobster roll, Wagyu tataki, crab fried rice and robata-grilled skewers.
That menu positions Glass Box in the increasingly crowded premium-AYCE segment, where the fixed price is meant to buy access to variety and luxury ingredients rather than simply volume. Las Vegas is an especially natural market for that proposition: the city has spent decades teaching visitors that abundance and spectacle can occupy the same plate.

The restaurant also preserves visual elements of the original Del Mar concept, including the glass-focused sushi-bar presentation. The Bend location expands the physical footprint while keeping the sense that preparation itself is part of the show.
Glass Box opens Sept. 26, so this is one coming-soon story with a very short runway. Once the doors open, Las Vegas will have another restaurant testing how far the AYCE category can move toward omakase territory without ceasing to be unlimited.
