Binchotan is preparing an all-you-can-eat Korean barbecue restaurant at 953 East Sahara Avenue, Suite E9, in Las Vegas, Nevada. Owner Sean Liang has described a pork-focused concept for Commercial Center, with an unusually relaxed proposal for the table: no dining time limit.
That remains an announced plan, rather than an opening policy diners can test just yet. Clark County’s business-license record still lists Binchotan as pending, under Chef’s Steam Table LLC, and no confirmed first-service date has surfaced.
Liang outlined the restaurant in a June 17 interview with What Now Las Vegas, explaining its emphasis on pork and his intention to let customers enjoy the meal without a clock governing the next round. Pork galbi appeared in the owner-supplied material accompanying that report.
He also described more than a decade in the meat business and his work with Chef’s Steam Table. The full Binchotan menu, AYCE prices and children’s rates have not been released, so the pork specialty is the clearest food detail available.
The original goal was an early-September opening, with a fall grand opening dependent on construction and permitting. September passed, but subsequent activity supports a project still in preparation. Liang attended a September 22 hospitality gathering as Binchotan’s owner; What Now’s September 29 account continued to describe the restaurant as preparing to debut.
An October 17 recruitment advertisement is seeking a prep cook for Binchotan at the same Sahara Avenue suite. Hiring is a useful sign of activity, although it does not establish that the restaurant is cleared to open.
The address has Korean barbecue history. Jin Mee Korean BBQ was documented at Suite E9 years before Binchotan’s plans, including in a 2009 conference dining guide. Whether it was the immediate predecessor, and when it left the space, have not been established.
The next announcements to watch are the menu, prices and opening date—and whether that proposed freedom from the usual table clock makes it into the final dining rules.
