EXPERIENCE
Yama Kitchen in Humble makes all-you-can-eat dinner a choice between hot pot and Korean barbecue, with an optional combination for anyone happy to tend both. Japanese sushi joins the cooking at the table, while a self-service buffet supplies ingredients and other ready-made choices. It’s an involved meal on FM 1960 Bypass Road East, suited to people who enjoy having something to do between bites. Choosing the broth is only the beginning.
The split between the buffet and server-delivered meat and sushi orders gives the restaurant its particular character. You can get up to explore, return to the cooking, and ask for another round without making every trip a full plate of dinner. Staff guidance is a useful part of the experience, especially when the group is getting acquainted with the setup. There’s a little coordination involved, and plenty to compare across the table.
The restaurant announces that combination plainly outside: Yama Kitchen Humble, with sushi, BBQ and hot pot beneath the name. Opened in late 2025, the dining room has a cheerful, contemporary vibe – unexpectedly luxurious for an endless meal. Inside the meal, those three parts have distinct roles: broth and barbecue call for cooking, while the sushi arrives prepared. The hot-pot selection is particularly extensive, beginning with seven broth choices.
A broth-focused supper and a more ambitious grill-and-pot gathering can therefore happen at the same address. The combined option suits diners who want the variety and don’t mind dividing their attention; choosing one cooking method keeps the evening simpler. During peak hours, the restaurant applies a 100-minute dining limit. Give the cooking its share of the evening, too: this is dinner with a few things to keep an eye on.
FOOD
Hot pot begins with a choice of seven broths. The Sichuan spicy broth uses beef tallow; pork, golden chicken, mushroom, tomato, tom yum and sukiyaki complete the selection. Tomato is the vegan broth option. The sauce station lets each diner mix an accompaniment for the cooked ingredients, separately from the soup itself.
Toro beef, lamb, chicken and pork belly are available for the pot. Dinner adds Wagyu chuck roll and USDA Choice ribeye, with snow crab and scallops among the listed hot-pot ingredients, subject to availability. The beef cuts and shellfish belong to that dinner selection; they should not be assumed to be part of the smaller lunch menu.
On the barbecue side, Yama short ribs and Angus beef ribs join bulgogi, spicy bulgogi, brisket, New York steak and skirt steak. Beef tongue and Wagyu chuck roll are also dinner choices. There’s a useful distinction between ordering a familiar steak and trying tongue or one of the rib cuts, all cooked at the table.
Pork cheek sits alongside signature pork belly, spicy pork belly and spicy pork bulgogi. Chicken comes as bulgogi, teriyaki or basil chicken. Garlic shrimp, spicy octopus and basil scallop add seafood to the grill order. The optional combined package lets these barbecue dishes share the meal with hot pot.
Sushi and sashimi arrive prepared, giving the table something to enjoy between batches of cooking. Salmon, tuna, yellowtail, mackerel, eel and tamago are joined on the dinner list by sweet shrimp and seared ribeye sushi. The ribeye is an appealing crossover for someone interested in beef beyond the grill, while eel and tamago keep cooked choices within the sushi selection.
Peppercorn tuna, yellowtail jalapeño, mango salmon and beef tataki make up the prepared starter selection. Peppercorn seasoning, jalapeño and mango distinguish these starters from the simple fish orders. A few sushi-bar dishes can accompany either cooking method, with buffet ingredients collected separately and meat and sushi orders brought by the servers.
