EXPERIENCE

Veranda begins before the restaurant does. Four Seasons Hotel Las Vegas connects directly to Mandalay Bay, but its own arrival is deliberately quieter: a private entrance, a non-gaming and non-smoking lobby, and the sense that the casino current has been left behind. From the front desk, the route follows the lobby windows toward Veranda, while the Four Seasons guest rooms rise high above on floors 35 through 39 of the tower.

The restaurant was recast in late 2025 as Veranda – California Brasserie, and the change is visible at the doorway. A botanical mural inspired by Northern California orchards and vineyards leads into warm woods, marble, brass and hand-cut zellige tile. A sculptural olive tree divides the room into smaller zones; beyond the windows, the patio opens toward palms, greenery and the Four Seasons private pool.

On Saturday and Sunday, the walkthrough becomes a brunch buffet. From 8 AM to 1 PM, the spread works more like a polished hotel brunch than a casino-sized field of stations. Fresh fruit, breads and housemade pastries make an easy opening pass before the made-to-order side of the meal: omelets prepared to order and warm doughnuts made fresh. The scale favors several compact returns rather than one plate built for sheer coverage.

That restraint fits the room. Veranda remains an unlimited Las Vegas brunch, but the experience is built around daylight, table service and the option to linger indoors or on the poolside terrace. Beverages are included with the buffet, while a separate weekend menu adds a la carte breakfast and lunch dishes for guests who want to mix formats. By coffee and a final pass near the pastries, Four Seasons feels less removed from Las Vegas than simply tuned to a quieter version of it.

FOOD

Veranda’s brunch food follows the same California-Brasserie idea as the redesigned room: fresh ingredients, a lighter visual touch and enough indulgence to make the meal feel unmistakably like weekend brunch. The buffet is the unlimited core, with seasonal specialties, made-to-order favorites, fruit, breads, pastries and sweets. Alongside it, the regular weekend menu remains available a la carte, so the room can serve a buffet table, an ordered breakfast or a combination of the two at the same time.

The buffet makes its easiest entrance through the cold and bakery side. Seasonal fresh fruit gives the first plate a clean start, while artisanal breads and housemade pastries provide the more traditional hotel-breakfast choices. This is where Veranda’s scale helps: the opening pass can stay selective, leaving room for hotter food and the made-to-order stations instead of turning the bakery case into half the meal before the eggs arrive.

Made-to-order omelets are the clearest hot-station signature. They give the buffet a cooked-to-order element that breaks up repeated trips to the spread and puts at least one plate on a different timetable. The restaurant’s broader breakfast cooking points in the same direction. Its current menu works with local mushrooms, California produce and West Coast dairy, including Laura Chenel goat cheese, while the kitchen sources from growers such as Babe Farms, Murray Family Farms, Girl & Dug, Frog Hollow Farm and Las Vegas-based Desert Moon Farms.

The a la carte menu is useful context because it shows what Veranda means by California brunch even when those dishes are not part of the unlimited spread. Eggs & Caviar pairs soft scrambled eggs with a crisp potato cake, creme fraiche and caviar. The Farmer’s Egg White Frittata brings tomato, local mushrooms, goat cheese and arugula together, while the Breakfast Quiche goes richer with black-pepper chicken sausage, caramelized onion, Gruyere and goat cheese.

Sweet breakfast dishes move beyond the pastry table. Peaches & Cream French Toast uses a tres leches royale with California peach compote, mascarpone and crunchy streusel. Later in the service, the weekend menu shifts toward lunch: bluefin tuna and king salmon appear together in a poke with avocado, edamame and housemade ponzu, and an heirloom tomato-and-watermelon salad adds ricotta, pistachio, balsamic and mint. Those plates are ordered separately, but they keep the California identity visible as the morning turns toward noon.

The buffet’s most playful stop comes near the end. Warm doughnuts are made fresh rather than simply stacked with the pastries, giving dessert its own small made-to-order ritual. They make sense after a restrained first trip through the sweets, when a final return can be about something hot and immediate instead of another survey of the entire spread. Housemade pastries and other sweet treats remain available for anyone who prefers the quieter finish of coffee and a baked dessert.

Beverages are included with the brunch buffet, and Veranda also maintains a separate morning-drink program with specialty coffee, juices, smoothies and brunch cocktails. That gives the meal several possible endings: espresso indoors, something cold on the palm-lined patio, or one more warm doughnut before leaving the Four Seasons enclave and rejoining the Strip. Veranda’s food program is not trying to outnumber the giant casino buffets; it uses a narrower buffet, cooked-to-order touches and a full restaurant menu to make abundance feel more composed.
