EXPERIENCE

Oma Sushi in Sugar Land serves made-to-order, all-you-can-eat sushi and Japanese kitchen dishes. Seared fish, specialty rolls and sizzling meat plates are prominent, with beef bulgogi and galbi short ribs giving the hot food a Korean accent. The meal is ordered from the table in successive rounds.

A long counter, red upholstered stools and cylindrical bead chandeliers give the dining room its distinctive look. There is a little glamour in the lighting, balanced by the casual ordering format. The curved brick entrance beneath a broad circular canopy makes the Southwest Freeway address recognizable from outside.

Half portions of specialty rolls are a thoughtful feature here. Order a half LSU if you want some of the deep-fried crawfish roll and still have plans for nigiri or a sizzling plate.

AYCE is offered at lunch and dinner, with à la carte meals available as well. A few sushi pieces, a roll and something from the kitchen can arrive over several rounds. That gives a meal at Oma time to develop around conversation.

FOOD

Oma’s seared sushi is worth a first look. Yellowtail comes with spicy mayonnaise and yuzu tobiko, salmon with mayonnaise and masago, and tuna with kizami wasabi and scallion. Those toppings give each fish a distinct finish: citrus-accented roe for the yellowtail, wasabi and scallion for the tuna. Seared Cajun albacore adds fried onion and ponzu, a citrus-soy alternative to the mayonnaise-topped pieces.

Plain salmon, tuna and yellowtail nigiri are available too. There is room in the same order for simply presented fish and something more elaborate, especially when the specialty rolls can be ordered in half portions. That is a thoughtful concession to anyone who reads a sushi menu and develops too many plans.

Shaggy Dog combines shrimp tempura and crab with cucumber, spicy mayonnaise and eel sauce. Caterpillar goes in a more focused direction, wrapping eel and cucumber in an avocado covering with eel sauce and sesame seeds. The difference is substantial enough to guide the order: fried shrimp and creamy sauce in one, eel and avocado in the other.

Lemon Salmon doubles up on its namesake fish. Baked salmon and crab mix form the filling, with raw salmon, avocado and lemon slices on top. The baked filling does not make this a fully cooked roll, an important distinction for diners avoiding raw fish. Double Tuna similarly uses fish inside and out: pepper tuna and cucumber below, then tuna, avocado, eel sauce and scallions above.

For a cooked specialty with a Southern accent, LSU brings together Cajun crawfish, crab mix and cream cheese. The roll is deep-fried and finished with eel sauce and spicy mayonnaise. A half portion is particularly useful here if you also have your eye on a sizzling plate from the kitchen.

Beef bulgogi and galbi short ribs give those hot plates a Korean influence. Pork gyoza and shrimp tempura add smaller cooked orders, while shrimp noodles with mushrooms provide something more substantial between rounds of sushi. Shrimp salad, seaweed salad, edamame and miso soup round out the meal. The sushi deserves attention, but leaving all that hot food unexplored would be a missed opportunity.
