EXPERIENCE

Happy Lamb Hot Pot puts its faith in the broth. This Inner Mongolian-style Chinese hot pot brand builds the meal around long-simmered bone broth and thinly sliced lamb, with beef, seafood and vegetables giving the table plenty else to consider. Its U.S. restaurants stretch from the West Coast through Texas and Chicago to the Northeast. At participating locations, all-you-can-eat service turns that shared pot into a good reason to linger over the next order.

The brand’s “no dipping” approach is an invitation to try the meat straight from the broth. Sauce bars still have a place here; you can enjoy the herbal original on its own merits and then decide whether you want anything alongside it. A divided pot gives a spice enthusiast and someone who prefers the original a way to share dinner. Agreement on the broth is useful. Agreement on how much chile everyone enjoys is rather harder to arrange.

The unlimited meal can combine meats brought to the table with self-serve vegetables, mushrooms, noodles and other additions. That gives dinner two pleasures: comparing slices of lamb and beef, and finding something beyond the meat worth putting in the pot. The group gets a shared meal without committing to a single combination of ingredients. Dining rooms differ, as do the ways those ingredients reach you.

Happy Lamb’s U.S. locations are independently operated licensees, and their offers vary. Some use several AYCE tiers; others have a base buffet with premium additions. Check the lunch selection and whether the package includes your broth, sauce-bar access and any extras. Choose the package for the foods you want, especially if Wagyu or lamb shank is part of the plan.

FOOD

The original marrow broth is the place to begin if you want to understand Happy Lamb. The brand describes a six-hour simmer, and representative U.S. menus list ginger, garlic, scallions, cardamom, dates and longan among its aromatics. There’s quite a bit of seasoning before any meat arrives. Lamb cooked in that broth is the defining combination here, and a useful first taste before adding a separate dipping sauce.

Spicy marrow broth adds chile oil, peppercorns, dried chile and salted black beans. A half-and-half pot, often called Best of Both Worlds, lets you compare the original and spicy versions with the same meat. Tomato, mushroom and sour-and-spicy golden cabbage broaden the broth choices at representative locations. The names describe the main flavoring, though: tomato or mushroom doesn’t automatically mean a meat-free base. Vegetarian versions may require a specific request.

Lamb deserves a proper look before the beef order takes over. Prime-aged lamb is among the base AYCE choices at participating restaurants, while spring lamb, shoulder and lamb toro slices can broaden the selection on higher tiers. Those differences give the lamb menu more interest than one generic plate of sliced meat, and help explain why the local package matters.

The beef selection can range from Angus beef and marinated garlic beef to beef toro and premium Wagyu cuts. Garlic beef offers seasoning on the meat itself, while the plainer slices leave more attention for the broth. Pork belly and chicken fillet provide alternatives if the table wants more than red meat. Ribeye and Wagyu may be paid additions or belong to particular tiers, with limits on some orders.

Fish fillet, shrimp and calamari give a seafood-minded diner substantial choices of their own. Shrimp paste is especially worth looking for: it’s a soft mixture portioned into the broth, rather than another plate of whole shellfish. Black mussels, fish balls with roe and lobster meatballs appear on some broader selections. These are examples of how far a menu can extend beyond sliced meat, with availability and inclusion depending on the restaurant and package.

Napa cabbage and baby bok choy give the pot leafy vegetables, with lotus root and daikon among the more substantial additions on broader menus. Mushrooms deserve a little attention of their own: enoki’s slender clusters, shiitake and ruffled wood ear offer different shapes and textures alongside the meat. Glass noodles, fresh thick noodles and udon widen the starch choices, while fried bean curd rolls have thin layers that take up broth. Selections and buffet inclusion vary locally.

Beyond the broth, house lamb dumplings and beef pie are among the cooked dishes listed on broader à la carte menus. They give a table interested in more than simmered ingredients another option to share. Baked lamb shank extends the lamb selection into a separate cooked dish, sold as an extra on those menus. Dessert can be part of the self-serve spread; some local tiers also include a limited ice-cream order. A little ice cream after spicy broth is an appealing prospect.
