EXPERIENCE
Galpão Gaucho gives the circulating Brazilian steakhouse meal a particularly theatrical arrival: its Golden Steak, covered in edible 24-karat gold leaf, is carved tableside and finished on a hot Himalayan salt block. The presentation belongs to the Full Experience, with no extra charge. It gives a table something to stop and watch in a meal otherwise built around many small decisions: another slice of beef, a portion of shrimp, or a pause for conversation.
The chain began in Napa, California, in 2016, drawing on the communal barbecue traditions of Southern Brazil. Founder Jovani Gava’s hometown, São Miguel do Oeste in Santa Catarina, helped inspire the concept. The galpão, a shed or gathering space, supplies the name’s connection to shared meals and gaucho culture. Galpão’s American restaurants translate that background into a polished steakhouse occasion, with wine service, set tables, and servers moving between seated guests.
Rodizio means the grilled selection comes around to you. Servers carry skewers through the dining room, carving portions of the cuts you accept. A green card invites service; red makes room to eat what has arrived. Between rounds, the self-serve salad bar offers cheeses, cured meats, vegetables, and prepared salads. Warm cheese bread and accompanying sides stay part of the meal at the table, so getting up is a choice rather than a requirement for every course.
The Full Experience includes seafood as well as beef, lamb, pork, and chicken. Regular, spicy, and garlic-crusted picanha let the same cut take three directions, while grilled cheese with honey and cinnamon pineapple interrupt the savory procession. A separate salad-bar-and-sides meal provides another way to dine. Those choices allow people sharing a table to give their meals quite different directions.
FOOD
Galpão Gaucho’s food revolves around an unlimited grill selection supported by a substantial salad bar and Brazilian sides. Its 18 selections include seafood, grilled cheese, and pineapple alongside the meats. Golden Steak supplies the spectacle: top sirloin wrapped in edible gold leaf, sliced at the table, then finished searing on a hot Himalayan salt block. Both it and the seafood belong to the standard Full Experience, broadening what the fixed-price meal can put on a plate.
Picanha, the fat-capped top sirloin cut associated with Brazilian barbecue, appears in three preparations. The signature version keeps the focus on the beef; picanha apimentada adds a spicy dry rub, while picanha com alho brings a garlic crust. Sampling small portions makes those differences easy to compare. Fraldinha, or bottom sirloin, takes the simpler route of sea-salt seasoning. These are useful cuts to get acquainted with before settling into repeat servings of a favorite.
Ribeye receives a pepper blend, while filet mignon is seasoned with sea salt or served wrapped in bacon. Beef ribs spend longer on the rotisserie at lower heat, giving the selection a slow-cooked preparation alongside the carved steaks. Lamb chops arrive in individual portions after white-wine seasoning, with mint jelly suggested as an accompaniment. Bacon-wrapped chicken breast offers another small portion with a cured, smoky component.
Seafood changes the rhythm of the meat service. Jumbo shrimp have a light citrus marinade; grilled salmon is seasoned with citrus and pepper, with passion-fruit sauce available alongside. Pork supplies three more preparations: Parmesan-crusted loin, rotisserie-grilled sausage, and ribs seasoned with white wine, citrus, and spices. Moving between these dishes makes the meal more varied than a succession of beef cuts alone, without requiring a separate seafood entrée.
Two sweeter grill offerings deserve room during the savory meal. Queijo assado is grilled white cheddar served with honey, combining warm cheese and sweetness in the same bite. Cinnamon-dusted pineapple is caramelized on the grill and sliced into portions. Both can sit between rounds of meat; the pineapple’s place in the procession need not wait for a formal dessert course.
The salad bar extends well beyond leafy greens. Smoked salmon, candied bacon, cured meats, and local and imported cheeses can build a substantial first plate. Hearts of palm, artichoke hearts, asparagus, sweet beets, and prepared salads offer other combinations. Guests choosing the salad-bar-only meal also receive cheese bread and sides, so that option has more substance than its name might suggest.
At the table, pão de queijo supplies warm Brazilian cheese bread. Garlic mashed potatoes, rice and black beans, and caramelized bananas accompany the grill selection. Wine and cocktails, including Brazil’s lime-and-cachaça caipirinha, are ordered separately. Dessert has its own menu: Brazilian pudim brings vanilla custard under caramel, while papaya cream blends fresh papaya and vanilla ice cream with crème de cassis. Tres leches cake, molten chocolate cake with vanilla ice cream, and berry-garnished crème brûlée offer three further finishes.
