EXPERIENCE
Chocho Hot Pot combines an individual cooking pot with the pleasures of a well-stocked ingredient counter. At this all-you-can-eat restaurant on Mercantile Parkway in Katy, ordered meats come to the table and the self-service Market Table supplies seafood, vegetables, starches and desserts. Your broth stays your own, while the trip to the counter lets you look over what might go into it next.
The Katy restaurant was Chocho’s first U.S. location when it opened in 2025. An all-you-can-eat offshoot of The Dolar Shop, it gives broth enthusiasts a choice that goes beyond picking one soup and stopping there. Pork and tomato can be paired, with other combinations available too. Someone who enjoys a creamy pork broth can keep that choice beside tomato’s gentler sweet-and-sour flavor, all within the personal-pot setup.
The room is considerably more exuberant than its restrained storefront suggests. Large illustrated face panels overlook the seating, while hanging greenery marks the Market Table. These details give the seated cooking and the browsing counter their own sense of occasion. It’s a fitting setting for a birthday or a family dinner where choosing the food is part of the fun, and where everyone has something to do besides wait for a finished plate.
The regular Premium menu is the basis of the meal described here; promotional packages can offer a different selection. There are numerous beef cuts, other meats and plant-based choices, with sparkling and mint waters included. Some seafood portions have set allowances, rather than unlimited refills. The dining period is two hours, with ordering ending 20 minutes earlier, so allow for both the browsing and the cooking.
FOOD
Chocho’s regular Premium menu gives beef lovers room to explore. Rib-eye and lean flat iron are joined by brisket, beef short plate, chuck eye and chuck tail flap, with center-cut beef tongue for diners interested in another cut. Short plate has a full-bodied beef flavor, while chuck eye is a juicy, robust choice. These meats arrive raw for cooking in the individual pots, so a favorite broth can accompany several different cuts over the course of dinner.
Pork belly brings the richer pork choice, while pork shoulder offers a juicy, balanced alternative. Lamb flap is delicate and tender, and skinless chicken thigh gives poultry eaters an option alongside the beef. Beef meatballs and two tripe choices—beef tripe and black beef tripe—add to the selection. If you enjoy the less familiar hot-pot cuts, tongue and tripe deserve consideration as much as another tray of brisket.
The pork-and-tomato broth pairing is an especially inviting place to begin. Pork broth is rich and creamy, while the house tomato broth has a gentle sweetness and a little sourness. Having both lets you enjoy those different soups during the same meal. Sukiyaki offers another sweet-savory choice.
Spicy broth can be ordered mild, medium or extra spicy, including combinations with pork or tomato. Tom yum is available too, with a tomato pairing among its options. Some spicy and tom yum versions carry a supplement, so check the particular combination when ordering. Mushroom vegan and tomato vegan broths provide plant-based bases; vegan fish cake, vegan shrimp sausage and vegan mushroom cake are named additions, alongside a vegan platter.
At the Market Table, seafood, vegetables and starches supply ingredients to choose for yourself. The buffet selection and ordered meats are unlimited, but a few named portions have their own allowances: abalone and oysters are limited to two pieces, and pork wontons to three.
Popcorn chicken, onion rings and sweet-potato fries are ready to eat when you want a break from tending the pot. Seasonal creations change, and the Market Table includes desserts.
Sparkling water and mint water come with the regular package. Other drinks are separately priced, including house-made plum juice and hot or iced soy milk, for anyone who prefers those with the hot pot. Coffee drinkers can choose an Americano or Snow Cap Coffee; an affogato combines coffee and ice cream for an optional sweet finish. Milk tea, cocktails and a Jungle Bird mocktail are available too.
