EXPERIENCE

Border Grill’s weekend brunch is a table-served all-you-can-eat meal rather than a buffet line, which unfolds as a presentation of culinary creativity. On Saturdays and Sundays from 10 a.m. to 3 p.m., the kitchen sends out made-to-order small plates for a fixed price, with a two-hour limit. The compact portions are intentional: the meal is built for repeated ordering, so the unlimited part comes from moving through the menu in rounds instead of building one oversized plate. A separate weekend lunch menu runs alongside brunch.

The restaurant sits on Mandalay Bay’s pool-and-convention side, between Shark Reef and the convention center rather than in the middle of the casino floor. The two-story, 9,100-square-foot space mixes indoor dining with an outdoor bar and upper and lower patios. Colorful murals and views toward Mandalay Beach and the Lazy River keep the setting bright, open and distinctly removed from the darker casino core.

The small-plate structure changes the pace. Savory dishes can arrive beside something sweet; a heavier plate can be followed by seafood, fruit or another egg dish; and the table can move through several combinations before anyone commits to a repeat. Because everything comes from the kitchen instead of a self-service station, the natural pattern is to start broadly, identify favorites and use the two-hour window as a tasting session.

Border Grill has been part of Mandalay Bay since 1999, and the brunch fits its long-running modern-Mexican identity without becoming a conventional hotel buffet. The abundance is concentrated: a dozen composed dishes, ordered as often as desired, inside a lively two-level restaurant opening toward the resort’s pool complex. For an AYCE meal, it feels less like navigating stations and more like letting a brunch menu keep restarting.

FOOD

Border Brunch compresses an all-you-can-eat meal into a menu of roughly a dozen Mexican-inflected small plates. The food is not arranged around a traditional breakfast spread of eggs, bacon and pastries; it moves among chiles, braised meats, tortillas, fruit, seafood and sweets. Because every dish arrives in sampling size, the menu works best as a sequence of contrasts rather than a single breakfast plate enlarged to buffet proportions.

The savory core starts with familiar brunch forms pushed toward Border Grill’s Mexican pantry. Chilaquiles layer crisp corn tortillas with guajillo cream, sofrito, avocado balm and an egg prepared to order. The breakfast taco folds eggs, chorizo, potatoes, poblanos and Oaxacan cheese into a flour tortilla, while the spicy chicken tamale brings guajillo sauce, avocado balm and salsa fresca into a softer, more focused plate.

Beef gives the menu two of its heaviest options. Barbacoa Benedict replaces the usual breakfast meat with smoked brisket barbacoa, setting it on a corn muffin under a poached egg and barbecue hollandaise. Birria Hash & Egg takes another route, pairing chile-braised beef with caramelized onion, peppers and crisp potatoes. These are the plates that can turn a tasting-style brunch into a substantial meal quickly, which makes their small format useful.

The sweet side is equally deliberate. Horchata French toast carries cinnamon and vanilla into piloncillo syrup and Mexican chocolate. Diablo Chicken & Churro Waffle works the sweet-savory angle more aggressively, putting crisp fried chicken and diablo salsa against a cinnamon-sugar mini waffle. Chef’s Secret Pancakes change with the day, while churro tots finish the dessert end of the menu with cajeta, cinnamon sugar and raspberry sauce.

There is room to pivot away from eggs and braised meat. Salmon avocado toast combines citrus-cured salmon with hand-mashed avocado, epazote cream cheese, capers and red onion. Campechana brings shrimp cocktail with housemade clamato, tortilla crunch, avocado, onions and cilantro. The prickly pear chia parfait is the lightest reset, built from chia seed, almond-coconut milk, lemon zest and fresh berries.

That range makes the made-to-order format especially useful. A first round can cover chilaquiles, salmon toast and French toast without requiring full entrée portions of any of them. The next can move toward birria, tamale or chicken and waffle, followed by a return to whichever dishes earned one. This is kitchen-paced AYCE, so abundance arrives through repeated composed plates rather than through the visual sprawl of a buffet.

The brunch menu is compact by large-buffet standards, but it uses that concentration to keep the choices distinct. Eggs recur, yet the surrounding flavors change from guajillo and chorizo to barbacoa and birria; sweets range from horchata and piloncillo to churro spice and cajeta; seafood provides a separate lane entirely. It becomes an unlimited brunch where variety comes from crossing a tightly edited menu several times, not from trying to survey hundreds of items at once overall.
