Hungry Bowl plans to bring all-you-can-eat Mongolian grill and sushi to Latham, NY, giving the former Carrabba’s Italian Grill at Latham Center a new restaurant tenant.
Albany Business Review reported the plans October 28, describing the project as the brand’s first location in the Albany region. The restaurant is slated for 675 Troy-Schenectady Road, near Northway Exit 6. Hungry Bowl lists Latham on its website, and landlord COR Development’s site plan identifies Hungry Bowl Mongolian Grill on the property.
For a look at the concept, the brand’s Newington, CT restaurant combines a build-your-own Mongolian ingredient bar with sushi and ramen. Diners select noodles or rice, vegetables, proteins and sauces, then have their bowls cooked by the kitchen. Its menu lists everything from beef and pork belly to shrimp, with additional seafood choices at dinner. The sauce list wanders as far as Alfredo and marinara.
The Japanese side of Newington’s menu includes gyoza, takoyaki and tonkotsu ramen, along with sushi and specialty rolls. One namesake, the Hungry Roll, puts torched salmon over shrimp tempura and avocado. Newington offers a grill-only weekday lunch option as well as broader AYCE packages; sashimi is included in a higher-priced dinner tier. Latham’s own menu, package choices and prices have not been confirmed.
The Newington restaurant shares operators with Hungry Pot Korean BBQ & Hot Pot and Hungry Crab, CT Insider reported in February 2025. Owner Kevin Gong described Hungry Bowl as an extension of that work with a different concept.
Carrabba’s closed at the Latham property in February 2024 after operating there since 2005, according to the Times Union. The closure was part of a wider round of shutdowns by parent company Bloomin’ Brands.
Hungry Bowl has reused other chain restaurant spaces, too. Newington opened in a former TGI Fridays in February 2025, while its Leominster, MA restaurant occupies a former Outback Steakhouse, according to leasing broker Summit Realty Partners.
The Latham project has appeared in COR’s plans since at least December 2025, though an opening date has not been confirmed.
