UMI Hotpot Sushi & Seafood Buffet has put St. Matthews on its coming-soon list, with a restaurant planned for Shelbyville Road Plaza at 4600 Shelbyville Road, Suite 207.
The chain’s official Kentucky location page confirms the address and marks the restaurant “Coming Soon.” The plaza’s landlord independently identifies UMI on its September site plan, in an existing storefront beside Off Broadway Shoes. Louisville Business First reported the project October 26.
For readers who have been following UMI’s expansion, the name announces the general plan: prepared seafood and sushi, plus hot pot. This is a buffet for the perfectly reasonable person who wants sushi while deciding what to put in the broth.
The company’s national menu advertises more than 200 items, with examples including snow crab legs, oysters, Cajun crawfish, abalone and sashimi. The list extends through red-braised pork belly and ramen to strawberry cheesecake and tiramisu.
Hot pot gets a substantial share of that menu. The company lists mala, tomato, mushroom and bone broths, with ingredients including sliced beef, lamb rolls, squid, tripe and duck feet.
These are examples from the brand’s wider offering. The final St. Matthews menu has not been announced, including how hot pot will be offered at this restaurant.
UMI has grown considerably since its June 2023 Brooklyn grand opening, which a company announcement described as its third location nationwide. By that September, firsthand coverage of the Deptford, New Jersey, opening reported seven operating restaurants. The company now advertises more than 30 locations, with Indianapolis and Upper Arlington, Ohio, among its existing restaurants.
In St. Matthews, the setting is an established shopping center. Hagan Properties dates Shelbyville Road Plaza to 1954, with later redevelopment expanding it to roughly 390,000 square feet. Its current brochure has already made room for UMI on the map.
The company has not announced an opening date, Kentucky buffet prices or service hours.
