EXPERIENCE
Cowboy Japanese BBQ & Sushi brings all-you-can-eat Japanese barbecue and sushi together on Westheimer Road. Diners cook meat at a recessed circular grill and order prepared fish and rolls alongside it. That gives a group two good reasons to gather: the pleasure of grilling together and the chance to make sushi a substantial part of dinner.
At the location between Kirkwood and Wilcrest, meat trays, sauces and blue-and-white dishes share the space around a gold-colored grill surround. Cooking stays within reach, and passing plates becomes part of spending time together. The table can have different favorites without dividing the evening: someone can enjoy a hand roll while someone else tends the beef.
Sashimi gives the prepared side of the meal particular appeal. A fish enthusiast can enjoy dinner without waiting for the grill, while rolls offer another choice for diners who want sushi with their barbecue. You can be interested in the meat and still give the sushi order serious attention. At Cowboy, that is a perfectly sensible division of loyalties.
Cowboy offers a weekday lunch option as well as broader dinner packages. The tiered selection gives a group a choice about how much of the menu to explore, while keeping barbecue and sushi together in the dinner plans. This is a meal to enjoy with time for cooking and conversation, especially when choosing the next order is part of enjoying the company. Give both specialties a fair share of the discussion.
FOOD
Beef gives Cowboy’s tabletop barbecue plenty of room for comparison. Angus toro comes in original, shoyu and miso preparations, alongside beef brisket. You can start with the original before trying the soy-based or miso-seasoned versions, rather than making every round the same. The meat arrives ready for the recessed grill, while prepared sushi and kitchen dishes give everyone something to eat between batches.
The Ultimate selection broadens the grill order with bone-in short rib, beef tongue, New York steak and beef skirt in shoyu or miso preparations. Garlic butter cubes offer another direction, and a Wagyu beef-and-pork cheese sausage adds something different from the sliced cuts. Supreme brings further choices, including Wagyu chuck, flat iron and boneless short rib, along with Angus ribeye. These are package-specific additions, not cuts to assume come with every meal.
There’s plenty beyond beef. Pork belly comes in original and garlic preparations, with miso chicken breast, black-pepper dark meat and lamb shoulder giving the table other options. Seafood includes spicy squid and garlic butter shrimp; Ultimate adds green mussels, garlic scallops and tiger shrimp. Supreme reaches further with Argentine jumbo red shrimp, garlic abalone with green bean noodles, and lamb rib chops for another round on the grill.
Sushi deserves its own part of the order rather than an occasional piece squeezed beside the barbecue. Nigiri, maki and hand rolls provide the foundation, while Ultimate includes sashimi such as salmon, tuna and yellowtail, plus seared salmon and seared yellowtail nigiri. Supreme adds sweet shrimp sushi and sashimi, along with Wagyu sushi. A few fish selections between rounds of grilled meat give the meal a different pace without taking anyone away from the table.
The prepared dishes have enough variety to keep that table busy. Chicken karaage, takoyaki, gyoza, and shrimp and vegetable tempura all appear among the AYCE kitchen appetizers. Butterfly Kiss belongs here too: an Ultimate sushi-bar appetizer combining seared salmon, jalapeño, mango and yuzu sauce. It gives the fish a fruit-and-citrus accompaniment, while dumplings or fried chicken offer a more familiar beginning as the first barbecue order cooks.
Ice cream, pudding, fried banana and fried Oreos round out the AYCE selection. After comparing beef cuts, passing sushi and tending the grill, dessert can be a much simpler decision. A fried Oreo asks considerably less of the table than another round of short rib.
