La Caribeña Prepares a Caribbean Buffet Conversion in Milwaukee Wisconsin

Construction updates introduce Buffet Caribeña at the longstanding South Pearl Street restaurant.

October 14, 2026 • Wisconsin • BY BUFFET AUTHORITY

La Caribeña is preparing to turn its longstanding Milwaukee restaurant into Buffet Caribeña, introducing a Caribbean buffet concept at 1704 South Pearl Street. The restaurant’s social account is promoting the new format while showing that the conversion remains under construction.

A recent restaurant update promotes mix-and-match food and advertises “60 food stations.” Its attached graphic describes construction as 65 percent complete, placing the buffet conversion in an active building phase.

Other posts from the account describe Buffet Caribeña as coming in October 2026 or opening soon. A firm opening day has not been announced with the construction update.

The change has a substantial local backstory. La Caribeña was already serving at the Pearl Street address when OnMilwaukee visited in March 2014. That feature described a family-run restaurant offering Dominican dishes alongside Colombian and Puerto Rican food.

The 2014 feature identified brothers-in-law Ismael Roldan and Edwin Ordonez as the owners, with relatives from the Dominican Republic working in the kitchen. It described a menu shaped by several Caribbean traditions, rather than a single national cuisine.

The 2014 account also described a distinctive dining room inspired by Dominican neighborhoods, with grass-roofed cabanas, bright walls and bird sculptures. Buffet Caribeña therefore follows more than a decade of documented Caribbean dining at this address. It is a change to an existing local restaurant with an established identity.

The restaurant’s current website lists dishes such as slow-roasted pernil, mofongo and arroz con gandules. Those provide a sense of the existing kitchen’s repertoire. They should not yet be read as a confirmed opening-day buffet inventory.

That existing repertoire gives the conversion some particular interest for buffet diners: pork shoulder, rice dishes, plantains and other Caribbean preparations have been part of the restaurant’s identity. The opening buffet menu will establish which of those familiar dishes carry into the new service.

For anyone whose usual order already involves difficult choices between pernil, mofongo and rice, the buffet conversion has particular promise. An opening menu and date are the next details to watch; for now, construction is still underway.
