Rebel Pig’s restaurant buffet has ended in Palmyra, Missouri, following owner Doug Dry’s move to Rebel Smash & Strips at 7143 Missouri 168. After about ten years on downtown Main Street, Dry has pared back the menu, added breakfast and introduced self-service ordering. Pulled pork and brisket are still on the menu.
Ella Aguilar’s October 8 report for the Palmyra Spectator and NEMOnews lays out the transition: Dry bought the former HATS Restaurant earlier in the summer, announced his downtown departure in August and opened Rebel Smash before Labor Day weekend. He told the publication he wanted to simplify the restaurant, where buffet service and barbecue had been central to the old operation.
Breakfast, burgers and familiar barbecue
The current Rebel Smash menu leads with smash burgers and chicken strips. A classic single burger is $11.99 with a side, while a three-strip basket is $12.99 with a side and Texas toast. For former buffet regulars who came for the barbecue, six-ounce pulled-pork and brisket sandwiches are $12.99 and $17.99 respectively, both with a side.
Breakfast gives regulars a new reason to come earlier. A $15.99 platter includes bacon and sausage, a biscuit, seasoned potatoes, two fried eggs and gravy—a fairly persuasive invitation to make a morning of it.
The official website directs customers to self-serve kiosks or online ordering, with pickup and delivery options. Dry describes the approach as self-service with hospitality, and the local report says food is prepared fresh for each order.
The Rebel Pig name continues in catering
Rebel Pig Catering remains active, including buffet-style barbecue service for events. The food trailer also continues as Rebel Pig On the Go, keeping the old name on the road while the restaurant settles into its new home.
The Highway 168 property offers more parking and outdoor space than the downtown location. Dry told the newspaper he hopes to put that room to use for parties, concerts and other gatherings.
