Mouth by Southwest reported September 29 that the temporary concept offers Japanese hot pot featuring A5 wagyu and freshly prepared hand rolls. It serves as a bridge while design, permitting and construction proceed for Wagyu Factory, which is planned to combine Japanese barbecue and hot pot.
The restaurant’s official Arizona page lists the address as 16049B N. Arrowhead Fountains Center Drive in Peoria. Current posted hours are 4 to 10 p.m. Monday through Thursday, 4 to 10:30 p.m. Friday and 11:30 a.m. to 10:30 p.m. Saturday and Sunday.
The operator also lists last seatings earlier than closing: 9 p.m. Monday through Thursday and 9:30 p.m. Friday through Sunday. That is a useful detail for an AYCE hot-pot visit, where arriving at the closing hour is a poor opening move.
Local prices and tier-by-tier wagyu inclusions were not verified for this story. The A5 description comes from the local report; it should not be read as a promise that every meat is included in every possible package. Diners should confirm the Peoria menu when planning a visit.
The pop-up is backed by Chubby Group. Local reporting places it within a Valley expansion that includes Chubby Skewers in Mesa, which opened in 2025, and a Wagyu House planned for Chandler Fashion Center in 2027.
Those projects are separate from the Peoria transition. No completion date has been established for replacing the current Wagyu Master Shabu format with Wagyu Factory.
For now, the Peoria proposition is a working hot-pot restaurant with hand rolls, followed by a planned barbecue-and-hot-pot version at the site. The permanent concept is still coming; the broth does not have to wait.
