Chubby Cattle BBQ Still Coming to Denver After More Than a Year

The AYCE Wagyu yakiniku project at 99 S. Broadway remains officially listed as coming soon.

Chubby Cattle BBQ has not opened at 99 S. Broadway in Denver. That is the first and most useful fact to establish about a project that resurfaced in September coverage and then appeared again on Chubby Group’s own news feed.

What Now Denver reported on Sept. 11 that the Wagyu-focused barbecue concept was headed to South Broadway, and Chubby Group reposted the item Sept. 28. But the company’s current Denver location page still labels the restaurant “Coming Soon,” and the underlying report explicitly says no opening date has been announced.

A South Broadway project with a long runway

The Denver restaurant is not a newly announced project, either. Chubby Cattle’s own site dates its Denver BBQ listing to June 26, 2025, and What Now reported on the same 99 S. Broadway location in October 2025. The more accurate story in 2026 is that a long-planned restaurant remains alive in the company’s pipeline after more than a year of public “coming soon” status.

There is evidence that the project advanced beyond a placeholder on a corporate map. Permit data collected by BuildZoom shows a June 2025 tenant-finish filing at 99 S. Broadway for a restaurant buildout covering a kitchen, dining area, restrooms and service spaces, with a stated valuation of $201,916. A commercial construction filing followed in July. The available records do not establish the current stage of work or explain the long timeline.

If it opens as planned, the restaurant would sit only a short distance from Chubby Cattle Hot Pot at 2 N. Broadway, giving Chubby Group two distinct abundance-dining formats along the same corridor. The hot-pot restaurant has operated in Denver for years; the BBQ project would add the group’s Japanese yakiniku-style concept rather than simply duplicating the existing operation.

What Chubby Cattle BBQ would bring to Denver

Chubby Cattle describes its BBQ brand as an all-you-can-eat Wagyu experience built around tabletop grilling. The company says its AYCE menu uses three Wagyu levels – American Wagyu, Australian Full Blood Wagyu and Japanese A5 Wagyu – and traces the first Chubby Cattle BBQ location to Monterey Park, California, in April 2023.

That brand-level description is useful, but Denver-specific details remain absent. Chubby Cattle has not posted a Denver menu, local tier pricing or an opening schedule, so prices and packages from Las Vegas, New York or other markets should not be imported into the Denver story as though they have been confirmed locally.

The distinction is especially important because a Sept. 11 article can easily look like a Sept. 11 opening when it is encountered later in a news feed. In this case, the date belongs to the report, not the restaurant. The Sept. 28 Chubby Group post likewise appears to be a corporate resurfacing of that coverage rather than a grand-opening announcement.

For now, the relevant Denver news is persistence: Chubby Cattle BBQ remains on the board, the address remains 99 S. Broadway, and the company still intends to bring its AYCE Wagyu grill format to the city. After more than a year of “coming soon,” the next genuinely new development will be the one everyone actually wants – an opening date.
