EXPERIENCE

Kaizen Fusion Roll & Sushi is a made-to-order all-you-can-eat sushi restaurant in Henderson where the unlimited format stretches well beyond a standard roll-and-nigiri list. The South Eastern Avenue dining room is compact and casual, and the meal stays restaurant-scaled: food arrives from the sushi bar and kitchen in repeated rounds rather than from buffet stations. Nigiri, sashimi, specialty rolls, hot appetizers, grilled meats and Korean-leaning dishes all live within the same program, so a table can move from raw fish to baked rolls to short ribs without leaving the AYCE format.

The breadth is easier to use because many specialty rolls are offered as half orders as well as full rolls. That is a practical advantage in an unlimited meal. A Hawaiian Roll or Double Hamachi can be sampled without committing most of a round to one large roll, leaving room for crispy rice, scallop dynamite or another piece of nigiri. AYCE runs on a 90-minute limit, making smaller, varied orders especially useful.

Kaizen’s service model keeps the experience close to a busy neighborhood sushi restaurant. Plates are cleared between rounds, new orders keep arriving, and peak periods can fill the compact room quickly enough that reservations are useful. The main decision is how widely to range: raw fish can occupy an entire meal, but the menu repeatedly invites detours into tempura, Korean barbecue, noodles and dessert.

That range is Kaizen’s defining strength. Summer 2026 brings premium seasonal foods into the AYCE price with beverages separate, rather than building the meal around a succession of upgrades. For an unlimited restaurant in the Las Vegas metro, the combination is unusually broad: flexible portions, a deep sushi list and enough hot-kitchen material to make another visit feel different from the first.

FOOD

Kaizen’s food program begins with raw fish rather than making specialty rolls carry the entire AYCE meal. The nigiri list runs through tuna, yellowtail, salmon, halibut, red snapper, mackerel, eel, octopus and seared albacore, then reaches into toro, yellowtail belly, ocean trout, kanpachi and sea scallop. Sashimi can be ordered just as directly, which gives the menu a substantial lane for anyone who wants to keep rice and sauces to a minimum.

The composed sashimi plates add more seasoning without turning the fish into rolls. Yellowtail comes with jalapenos, salmon with yuzu and lemon, white fish with yuzu ponzu, and tuna or albacore can arrive pepper-seared with crispy onion. Half-shell oysters with ponzu and kanpachi prepared Chef Han style extend that colder side of the menu. These dishes are useful early in the meal, before baked sauces, fried components and richer meats begin accumulating.

Specialty rolls supply the largest field of choices, and the half-roll format makes that field practical. The Hawaiian Roll pairs garlic albacore with seared albacore, avocado and garlic ponzu. Kiss of Fire combines crab, avocado and cucumber with spicy tuna, white fish, jalapeno and garlic ponzu. Double Hamachi layers spicy yellowtail beneath fresh yellowtail, while the Lion Roll adds fresh salmon and crispy onion to a crab-avocado base. The no-rice Rose and White Rose rolls provide another route when a table wants fish without another layer of sushi rice.

Baked and tempura rolls move into heavier territory. Scallop Volcano places baked scallop and mushroom over a crab-avocado-cucumber roll; Silver State adds lobster-crab mix, white fish and dynamite sauce; Lobster Crunch combines shrimp tempura with lobster-crab mix and crunch. Snow Corn, Baked Salmon and the Korean BBQ Roll continue the same fusion-minded approach, using dynamite sauce, cream cheese, eel sauce or grilled short rib where a more traditional sushi list would stop.

The hot kitchen is unusually deep for an AYCE sushi restaurant. Spicy garlic edamame, crispy rice with spicy tuna, scallop dynamite and soft-shell crab can work as small interruptions between sushi rounds. Pork belly bao, Korean BBQ short rib, boneless short rib, rib-eye steak and Korean fried chicken give the meal a separate grilled-and-fried branch. Ramen, udon, curry udon and fried rice are available too, although they make more sense as deliberate choices than automatic additions when the sushi list is already this large.

Summer 2026 pushes the crossover further. Kaizen folds bulgogi, spicy Korean barbecue pork, baby back ribs, Cajun-miso seafood teppan and kimchi fried rice into the same AYCE program. Premium selections include snow crab, oysters, halibut, toro and wagyu without an added premium-item charge. That seasonal layer makes Kaizen more than an unlimited-roll house; the menu can support a meal built around raw fish, Korean barbecue, cooked seafood, or some mixture of all three.

Dessert keeps some of the restaurant’s playful roll theming intact. The Ice Cream in Your Mouth Roll wraps deep-fried apple in soy paper and tops it with fried banana, fresh strawberry and fruit sauce. Tempura cheesecake, mochi ice cream and creme brulee provide more conventional endings. After a menu this broad, the useful final decision may be the simplest one: another piece of fish, or something unmistakably sweet.
