EXPERIENCE
Umiya Sushi is a made-to-order all-you-can-eat sushi restaurant on West Flamingo Road, across from the Palms and a few minutes west of the Strip. The format is straightforward: sushi, specialty rolls and cooked Japanese dishes are ordered from the table rather than collected from a buffet line. Umiya also keeps a full à la carte menu, but AYCE is the restaurant’s defining identity.
The pricing structure gives the day four distinct entry points. Weekday lunch runs from 11:30 a.m. to 3 p.m. at $26.95. The all-day and dinner AYCE is $35.95, Premium AYCE is $45.95, and a $23.95 late-night AYCE begins every evening after 9 p.m. Umiya stays open until 12:30 a.m., with last seating at 11:30 p.m., so late-night unlimited sushi is part of the regular operation rather than an occasional promotion.
The meal develops in rounds. Nigiri and simpler rolls can establish the fish first, specialty rolls bring baked, fried and spicy combinations, and the hot kitchen supplies breaks in temperature and texture. Umiya’s broader menu moves easily between salmon, tuna and yellowtail, then gyoza, grilled fish, crispy rice or a baked roll. The separate AYCE price points are significant because the restaurant treats lunch, all-day, premium and late night as distinct offers rather than one menu sold at four prices.
The room is contemporary and casual, set in Flamingo Arville Plaza rather than inside a resort. That keeps the experience centered on ordering, sharing and deciding what deserves another round. Umiya’s distinction is less about theatrics than access: AYCE through lunch, dinner and late night, a deep sushi selection, and enough cooked food to keep the meal from becoming repetitive.
FOOD
Umiya’s menu is broadly thought of as three sections: fish-first sushi, heavily built specialty rolls, and a hot kitchen substantial enough to keep the meal from becoming a sequence of rice and raw fish. Nigiri is the cleanest starting point. The current repertoire includes salmon, tuna, yellowtail, albacore, mackerel, eel, shrimp, octopus, squid, surf clam and tamago, along with treated pieces such as garlic tuna, yuzu yellowtail, seared albacore and pepper-seared tuna.
Those seasoned and seared pieces show Umiya’s style particularly well. Garlic tuna keeps the basic nigiri format but adds a sharper aromatic edge. Yuzu yellowtail brings citrus and jalapeño. Pepper-seared tuna and seared albacore add a cooked surface while keeping the fish at the center. Umiya’s sashimi repertoire works with the same selections through tuna with garlic ponzu, yellowtail with jalapeño, seared tuna in AJ sauce and seared albacore with crispy onion and ponzu.
The roll section is deliberately less restrained. Japanese Lasagna combines crab, avocado and cream cheese with tempura crunch, dynamite sauce and eel sauce. Baked Salmon layers salmon over avocado, yamagobo and cream cheese before baking it with dynamite sauce. Vegas Lasagna pushes further with spicy crab, cream cheese and baked lobster, while Spicy Tataki keeps the emphasis on tuna in a richer roll format. These are not delicate two-bite interludes; they are the dense, sauced counterweight to the simpler nigiri.
The cooked side is deep enough to function as a second meal plan. Crispy rice carries spicy tuna over fried rice blocks with jalapeño. Seafood Dynamite bakes scallop, shrimp and mushroom under dynamite sauce and cheese. Baked mussels stay in the same creamy-spicy lane, while ika yaki, grilled mackerel and broiled yellowtail collar move toward cleaner grilled seafood. Gyoza, agedashi tofu, shrimp tempura and jalapeño poppers fill in the appetizer range.
Small resets are helpful in an AYCE sushi meal, and Umiya has them. Miso soup, cucumber salad, seaweed salad and edamame can interrupt the heavier roll sequence, while tuna poke supplies raw fish without another piece of sushi rice. That makes it possible to keep moving through the menu without every round becoming larger and richer than the last.
Bluefin tuna and toro have also appeared repeatedly in Umiya’s 2026 AYCE promotions, but they should be understood as rotating bonuses rather than permanent baseline items. Some promotions have offered unlimited bluefin; others have limited toro nigiri or sashimi to a small number of pieces per guest, always while supplies last. When those fish are in the building, they broaden the premium side of the meal considerably, but availability can change from day to day.
The defining strength is therefore breadth with several different ways to use it. A fish-forward meal can stay with nigiri and sashimi preparations. A richer meal can lean into Japanese Lasagna, Baked Salmon and dynamite-sauced seafood. A mixed approach can alternate raw fish with grilled mackerel, yellowtail collar and crispy rice. Umiya’s four AYCE price points make that range available across most of the day, while the menu itself gives the repeated ordering enough contrast to remain interesting.
