EXPERIENCE

Hwaro 1 is an all-you-can-eat Korean barbecue and sushi restaurant on Spring Mountain Road, built around cook-your-own tabletop grills. The current menu is split between a lower-priced Lunch + Late-Night AYCE selection and a broader Premium AYCE tier. Choose the level, fire up the grill, and build the meal across meats, sushi, seafood, hot sides and dessert.

Hwaro’s renovated room is modern and almost entirely booth seating, so each party works from a compact table organized around a single grill. Raw meat plates, sauces, wraps and side dishes compete for space with sushi and cooked items as the meal develops. This is not a self-service buffet; abundance arrives by order, which keeps the experience anchored at the table. The visual rhythm is familiar Korean barbecue – meat hits the grate, finished pieces come off, another plate arrives – but the sushi program means the table can move in more than one direction at once.

The present Hwaro 1 is broader than a conventional meat-only Korean barbecue room. Carpaccio, hand rolls, specialty rolls, ramen and tempura sit alongside brisket, kalbi, pork and seafood for the grill. That overlap is the location’s clearest point of difference: the meal can alternate between Korean barbecue and Japanese preparations rather than treating sushi as a token side option.

Hwaro also functions as a genuine late-night restaurant. The official schedule now runs daily until 3:00 a.m., with a 2:00 a.m. last call, giving Spring Mountain another substantial dining option after traditional dinner hours have ended. The setting is still a strip-plaza restaurant rather than a casino destination. What it offers instead is a concentrated, social version of abundance: one booth, one hot grill, a long list of possible next orders and enough range to keep the final round from looking much like the first.

Greater Las Vegas Destination

FOOD

The food program at Hwaro 1 combines two all-you-can-eat tracks that could easily have been separate restaurants. Korean barbecue remains the foundation, but sushi, carpaccio, hand rolls, tempura, ramen and other Japanese-leaning dishes are integrated deeply enough to change how the meal can be built. The lower-priced Lunch + Late-Night menu covers the core experience; Premium AYCE expands the selection with higher-end beef and pork cuts plus additional fish preparations.

The regular grill selection starts with the quick-cooking cuts that make Korean barbecue easy to pace in rounds. Prime brisket can go down first, followed by beef toro, special Hwaro toro, ribeye bulgogi, LA kalbi, Hwaro miso kalbi and Emperor’s kalbi. Beef tongue changes the texture, while pork cheek, pork toro, sliced pork toro and spicy pork bulgogi give pork nearly as many ways onto the grate. Teriyaki and spicy chicken are available for a lighter change of direction.

Premium AYCE is where the steak side becomes more pronounced. Premium Angus New York strip, premium ribeye, yakiniku ribeye, filet mignon and beef skirt steak move the grill beyond the thinner everyday cuts. Soy honeycomb pork toro, premium sliced pork toro, Kurobuta pork steak and Hwaro pork kalbi extend the same idea to pork. Several of these premium specials are portion-controlled within the AYCE format, so they work as deliberate centerpiece orders rather than an endless parade of identical steak plates.

Seafood makes the grill more flexible. Butter shrimp, baby octopus, squid and spicy squid can take turns with the meats, while the sushi menu opens a second route through dinner. California and Alaska rolls cover familiar ground; Hwaro Special, Orange Blossom, Bom Bom, Edo, Don’t Cry Hwaro and Crunch Roll move into house combinations. Garlic tuna, garlic salmon, yuzu yellowtail and miso salmon add simpler fish-forward bites, while premium hand rolls and tuna, salmon, yellowtail and octopus carpaccio make it possible to pause the grill without really pausing the meal.

The cooked side of the menu is useful precisely because so much of the meal is happening over live heat. Corn cheese brings a sweet, molten stray from beef and pork; gyoza, shumai, takoyaki, shrimp tempura and chicken karaage add crisp or fried textures without taking over the table. Mushroom fries are one of the less expected snack-style choices, and edamame provides a simple reset when another meat plate would be too much, too soon.

Soup and noodles can turn that reset into something more substantial. Miso soup is the lightest option, while tonkotsu ramen and spicy tonkotsu ramen bring a full bowl into an already crowded AYCE meal. Nabe hot pot pushes still farther from the standard KBBQ script. At the table, lettuce wraps, radish wraps, napa kimchi, cucumber kimchi, ssamjang, sliced jalapeno, garlic and garlic butter let the same brisket or kalbi become several different bites depending on what gets wrapped around it.

Dessert stays compact but gives the meal a clean ending. Affogato pairs coffee with vanilla ice cream; yuzu sorbet brings a tart, cold finish; a fudge brownie with vanilla ice cream is the heavier option. Hwaro’s menu is less interesting as a count of choices than as a sequence of pivots: brisket to sashimi, pork toro to a hand roll, mushroom fries to ramen, then one last cold dessert after the grill has finally gone quiet.
