EXPERIENCE

DOMA sits in Southern Highlands Marketplace, well south of the Strip, and the arrival feels more like a neighborhood dinner than a Las Vegas dining expedition. The storefront opens into a broad, modern Korean barbecue room with generous spacing around the tables. Decorative paintings and polished finishes give the restaurant more visual presence than a bare-bones AYCE room without making it formal.

Once seated, the table fills in layers. Banchan, sauces and lettuce establish the first perimeter; then the built-in grill becomes the working center while meat plates and hot sides arrive around it. DOMA’s size helps. Servers can move between tables, clear dishes and replace cooking surfaces without the meal feeling pinched into the aisle.

The menu is tiered, so the walkthrough begins with a decision rather than a buffet line. Standard already covers beef, pork, chicken, seafood, vegetables, appetizers and sushi rolls; higher levels add more expensive cuts and a deeper selection. From there the meal becomes a sequence of rounds: quick-cooking brisket, thicker steaks and short ribs, then pork belly, shrimp or squid while steamed egg, japchae and corn cheese occupy the spaces between.

At busier dinners the room grows louder with conversation, sizzling grills and full booths, but the spacious layout keeps the energy from feeling compressed. Frequent grill changes and steady table attention help reset the cooking between richer rounds. Dessert provides a playful finish: Melona bars and shaved-ice-style sweets move the table from smoke and sear to something cold and simple. The overall experience is polished, roomy and easy to navigate, with most of the movement happening at the table rather than through a buffet.

FOOD

DOMA’s Standard tier is already a substantial Korean barbecue menu. It reaches across top blade, New York steak, garlic tenderloin, finger short ribs, brisket, marinated brisket, beef belly and bulgogi before moving into pork belly, chicken, squid and garlic-butter shrimp. The first meat order is less about finding enough variety than deciding how quickly to move from thin, fast-cooking cuts into richer and thicker ones.

Brisket is the natural opening move. Its thin slices cook in moments and leave the grill ready for marinated brisket or beef belly, where the fat begins to render and crisp at the edges. Finger short ribs and New York steak slow the pace. Garlic tenderloin brings a steakhouse-like piece to the tabletop, while bulgogi supplies the sweeter marinated profile. The Doma and Premium levels extend that progression with ribeye, hanging tender, boneless short rib, LA short rib and Wagyu selections.

Pork keeps the middle rounds from becoming an all-beef exercise. Thick pork belly needs time to color and render; thin-sliced belly cooks much faster, and soy or spicy versions change the seasoning without changing the familiar cut. Chicken comes in Cajun, soy and spicy preparations. Garlic-butter shrimp, squid, spicy squid and vegetables such as zucchini, asparagus, pineapple and king oyster mushrooms give the grill a different set of textures.

The side menu can shape the meal rather than merely decorate it. Steamed egg is a soft, hot pause between grill rounds. Corn cheese is richer and sweeter, while japchae adds glass noodles and sesame-soy depth. Sugar-glazed sweet potato wedges provide a sticky counterpoint to savory meat. Garlic edamame, salads, dumplings, shrimp shumai and spring rolls build smaller bites around the barbecue without taking over the grill.

Sushi is more than a token add-on. Standard includes California, Philadelphia and shrimp-tempura rolls alongside combinations such as the Doma Roll, Mexican Roll, Screaming Shrimp, Crunch Inferno, Fire Cracker, Crunch Tiger and Sunset Roll. The selection is broad enough to become its own small progression from simple crab-and-avocado rolls toward spicy tuna, tempura shrimp and richer sauces. A couple of rolls can bridge the wait for thicker beef or extend a seafood-heavy round while the tabletop grill stays occupied.

Soups and noodles are best saved for later because they can consume appetite quickly. Soybean stew and spicy soft-tofu stew bring broth and heat after repeated grilled meats, while spicy brisket ramen and udon push toward a full extra course. Cold noodles make particular sense after fatty beef, using chilled broth, noodles and crisp garnishes to reset the palate.

The last decision is whether to stop when the grill does. DOMA finishes with Melona bars in flavors such as melon, mango, strawberry and ube, along with snow-cone-style options. After brisket, pork belly, short rib, corn cheese and stew, the cold fruit-forward dessert is a welcome change and gives the meal a clean ending instead of letting the final meat plate simply become the last thing on the table.
