KPOT Korean BBQ & Hot Pot Moves Closer to Opening in Colorado Springs

Liquor approval and hiring add momentum at the former On The Border on North Academy Boulevard.

September 27, 2026 • Colorado • BY BUFFET AUTHORITY

KPOT Korean BBQ & Hot Pot is moving closer to opening in Colorado Springs, where the fast-growing all-you-can-eat chain is preparing a restaurant at 7695 N. Academy Blvd. in the former On The Border building.

The project cleared a meaningful milestone on Aug. 21, when Colorado Springs approved a new Hotel and Restaurant Liquor License for KHP North Academy LLC, doing business as KPOT Korean BBQ & Hot Pot. Hiring is also underway for restaurant positions, while KPOT’s official Colorado Springs page continues to list the location as coming soon. An opening date has not been announced.

The distinction matters because the restaurant itself is not a brand-new revelation. Plans for KPOT at the North Academy address had been circulating publicly since late 2025, and local residents reported seeing KPOT signage at the former On The Border earlier this year. The current development is that the project is visibly advancing toward an opening rather than merely existing on a future-location list.

Another Colorado KPOT Is Taking Shape

Colorado Springs is part of a wider KPOT buildout in the state. The chain currently operates restaurants in Aurora and Thornton, while its own location directory also lists Lakewood and Colorado Springs among the Colorado markets in development.

At KPOT’s operating Aurora and Thornton restaurants, the all-you-can-eat format is priced at $22.99 for weekday lunch and $33.99 for dinner, with Korean BBQ and hot pot available together for an additional $5 per person. Those prices are useful context, but they should not be treated as Colorado Springs pricing: KPOT says pricing and offerings can vary by location, and the Colorado Springs page has not yet published a local menu or price chart.

What Diners Can Expect

KPOT combines two cook-it-yourself formats at the same table. Diners can grill Korean BBQ selections such as brisket, pork belly and bulgogi while also cooking meats, seafood, vegetables, tofu and noodles in individual hot-pot broth. The chain says its broader menu offers nearly 100 possible selections across the two formats, plus access to appetizer and sauce bars.

For Colorado Springs, the remaining questions are the practical ones: when the doors open, what the local price will be and whether the restaurant launches with the same lunch-and-dinner structure used at KPOT’s existing Colorado locations. With the liquor license approved and hiring underway, those questions are now considerably less theoretical than they were a few months ago.
