Mall of America is getting its first dedicated hot pot restaurant. Fire & Wave is planned for spring 2027 in Bloomington, Minnesota, bringing individual cook-at-the-table hot pots to one of the country’s largest shopping and entertainment complexes.
The restaurant is being built around two unlimited options. Diners will be able to choose all-you-can-eat hot pot alone or step up to a combined hot-pot-and-sushi package. The sushi side is expected to include rolls, nigiri, sashimi and small plates, while premium items such as Wagyu will remain à la carte rather than becoming part of the unlimited tier.
Mall of America Is Getting Its First Dedicated Hot Pot Restaurant
Individual hot pots give the concept flexibility that shared-pot restaurants do not always have. Each diner can choose a broth and assemble a meal independently, which is particularly useful in a mall environment where groups may arrive with very different spice tolerances and ingredient preferences.
The planned sushi combination also makes Fire & Wave part of a broader AYCE convergence. Newer concepts increasingly combine hot pot with Korean barbecue, sushi or self-serve side bars, turning what used to be separate restaurant categories into one fixed-price dining system.
Fire & Wave Will Offer Two Different Unlimited Paths
Mall of America already contains a vast range of restaurants, but hot pot has been a conspicuous gap. Fire & Wave will fill it with a format that is inherently experiential: shopping-center diners will be doing part of the cooking themselves.
Spring 2027 remains a target rather than a precise opening date. The next useful details will be pricing, exact menu boundaries and the final location within the mall. What is already clear is the central proposition: one hot pot, as many rounds as appetite allows, with sushi available as the larger version of the deal.
