EXPERIENCE

The first decision at Chubby Cattle BBQ arrives before the grill is hot: Silver, Gold or Diamond. The three-tier menu turns all-you-can-eat yakiniku into a structured progression rather than a single open list. Silver supplies the broad foundation of wagyu, Angus, pork, sushi, seafood, hot dishes and self-service accompaniments. Gold adds one per-person choice from premium special-meat and special-dish groups, while Diamond expands those limited selections to two each.

Once the tier is settled, the table becomes the working center of the restaurant. Orders move through a tablet, plates of raw meat arrive in rounds, and the built-in grill keeps the meal active from beginning to end. Robotic runners are part of the delivery system, while servers still explain the menu, change grill surfaces and step in around the cooking when needed. A 90-minute limit, with last call before the end, gives the abundance a clock and keeps the meal moving.

The room matches that controlled pace. Dark wood, black surfaces, gold-toned accents and glowing shoji-style panels give the restaurant a polished Japanese-inspired look without turning it formal. Low-profile ventilation is integrated around the grills rather than hanging over the table, keeping sight lines open. Self-service areas for vegetables, salads, rice dishes, drinks, milk tea and dessert give guests a reason to move while the next round is arriving.

That combination is the restaurant’s defining character: premium ingredients delivered through a system designed for repetition. Chubby Cattle is less a traditional buffet than a ninety-minute sequence of choosing, grilling, clearing and choosing again. The tiers set the boundaries; inside them, the pleasure comes from deciding how far to range beyond the grill before appetite catches up with the menu.

FOOD

Beef defines the menu, but the point is not simply that Chubby Cattle serves wagyu. The restaurant divides wagyu into levels, cuts and degrees of access, making the meat program the organizing structure of the meal. Even the Silver tier begins with a substantial grill list rather than a token entry point, so the experience can stay focused on beef without requiring an upgrade.

That base includes wagyu brisket, miso wagyu toro, wagyu chuck eye, thick-cut wagyu short rib, full-blood wagyu steak and thin-sliced beef tongue, alongside Prime Angus top blade and finger meat. Iberico pork and pork belly widen the grill without pulling attention away from the beef. These are small-plate yakiniku portions meant for repeated ordering: a quick-searing slice of brisket can be followed by a thicker short rib, then something fattier or more deeply marinated before the next round.

Gold and Diamond are where the premium ceiling rises. Japanese A5 selections appear in the special-meat group, with items such as A5 finger meat, A5 chuck eye and A5 wagyu short rib; Diamond gives each guest more of those limited choices than Gold. The special-dish side pushes wagyu beyond the grill with A5 wagyu foie gras nigiri, A5 wagyu uni caviar nigiri and a uni-caviar lobster roll. The upper tiers combine a broad AYCE program with a small number of deliberately limited luxury bites.

Sushi gives the meal another route when the grill begins to feel heavy. Wagyu nigiri sits beside salmon, yellowtail and roasted salmon nigiri, while spicy wagyu, spicy tuna, yellowtail-jalapeño and unagi-avocado hand rolls move the menu toward a more familiar sushi-bar register. Salmon and yellowtail carpaccio add cooler plates that can break up successive rounds of marbled beef.

The seafood selection works both on and away from the grill. Shrimp, squid, scallops and Argentine red shrimp bring different textures to tabletop cooking, while the hot-dish menu reaches into creamy spicy tom yum seafood soup, shrimp tempura, fried calamari and karaage. Wagyu also reappears in comfort-food forms, including wagyu udon, dumplings and rice dishes, so the restaurant keeps returning to its central ingredient even when the meal leaves the grill.

The self-service side is practical rather than decorative. Kimchi, edamame, cucumber, seaweed salad, lettuce, mushrooms and zucchini provide acidity, crunch and relief from beef fat. Wagyu curry rice can become a meal by itself if appetite is not managed, while cheese corn, truffle fries and fried snacks can make a group table fill quickly. Smaller plates make more sense here; the format rewards room for another round.

Dessert and drinks are folded into the abundance rather than treated as a separate finish. Milk teas, fruit-forward drinks, soft serve and small sweets extend the self-service portion of the restaurant after the last meat order. By then, the menu has moved from premium beef to sushi, seafood, hot dishes, vegetables and dessert..
