Cedar Hill is getting a new sushi restaurant with an unusual all-you-can-eat dining feature: Eki Sushi is preparing to open at 649 Uptown Blvd. with both revolving conveyor-belt sushi and a 90-minute all-you-can-eat option. Local reporting on September 17 placed the opening in mid- to late September.
The revolving side is the eye-catcher. Pre-plated sushi will circulate past tables on a conveyor belt, letting diners take dishes as they pass. That is a different experience from the more familiar made-to-order AYCE sushi format, and Eki plans to put both under one roof. The AYCE option is reported at about $20 for lunch, $30 for dinner and $31 on weekends. Guests who leave ordered food unfinished may be charged regular menu prices, and the all-you-can-eat window is limited to 90 minutes.
The menu is not confined to whatever happens to make another lap around the room. Preview menus show sashimi and nigiri, classic rolls and roughly 25 specialty rolls, including Rainbow, Sweetheart, Cedar Hill and Dallas Cowboys rolls. There are also gyoza, takoyaki, tempura and edamame, along with ramen, hibachi and teriyaki entrees. The belt may get the attention, but Eki is being built as a full-scale Japanese restaurant rather than simply a novelty conveyor counter.
The restaurant is moving into a freestanding former Applebee’s that opened in 2005 and closed in May 2025 after roughly 20 years. State records show a $190,000 remodel was registered for the Eki project in October 2025. The opening has taken longer than first expected: the restaurant had previously been promoted for a November 2025 debut and remained in development well into 2026.
Eki appears to be the first location operating under this name, but the concept is not coming from a team new to Asian restaurants. Public filings and prior reporting connect members of the Eki team to existing operations in Wichita Falls and Victoria. The Wichita Falls connection is especially relevant here: that operation currently offers all-you-can-eat sushi alongside a broader Japanese menu.
That makes Eki’s combination particularly interesting for abundance-minded diners. AYCE sushi and revolving sushi each have their own following, but putting both formats together gives guests two different ways to approach the same very pleasant problem: deciding how much sushi constitutes enough sushi.
No exact opening day had been announced as of September 19. For now, Eki is still targeting the latter half of September.
